Only free run juice is used. 40% Macabeo, 40% Xarello, 20% Parellada plus 15% reserve wine from a solera of small barrels. Primary fermentation is done in oak with some battonage and then aged on the lees for over 68 months! Disgorged with zero dosage.
The result is a cava with bountiful complexity: bright fruit flavors, toasty nuts, fresh bread and minerality. Worthy of aging, let it breathe for a bit after opening.
