Tasing Notes: 2017 Dancing Dragonfly Hula Ice Wine (Frontenac Blanc)

There are a few different ways of making dessert wine – this one, is ice wine, made by pressing frozen fruit which allows ice crystals to stay in the press, and not in the pressed juice. The result? A concentrated, sweet nectar with high levels of sugar (less water). Dancing Dragon Fly Winery’s “Hula” (St Croix Falls, WI) is a wonderful example of a new world dessert wine, made with Frontenac Blanc grapes, bursting with ripe, juicy tropical fruit.
